how do you know if server is empty and how do you select it? sorry I am newish

This is what mine looks like. You click on the "connect" that is by that server, you can scroll down to find more servers. Good shell hunting to you :-)

Usually the servers are not totally empty they have from 2 - 250 players in.
Some just let their player avatar on the beach and do other things though like trading, reading, pming, sleeping !? ....
And you just have the chance at that time to collect.
Most empty beaches are the ones with 4-5 players in every language/server
